    Prepare the Gnocchi Dough

    In a mixing bowl, combine the roasted butternut squash puree, egg, and salt. Gradually add the flour, mixing until a soft dough forms. Be careful not to overwork the dough.

    Form the Gnocchi

    Divide the dough into four pieces. Roll each piece into a long rope about 1/2 inch thick. Cut the ropes into 1-inch pieces, and use a fork to create ridges on each piece.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add the gnocchi in batches, cooking until they float to the surface (about 2-3 minutes). Remove with a slotted spoon and set aside.

    Fry the Sage

    In a large skillet, melt the butter over medium heat. Add the fresh sage leaves and fry until crispy, about 1-2 minutes. Remove sage and set aside.

    Combine and Serve

    In the same skillet, add the cooked gnocchi and gently sauté until golden brown. Stir in toasted pecans and Parmigiano-Reggiano cheese. Serve hot, garnished with fried sage leaves.
