Marinate the Chicken
In a large bowl, combine the buttermilk and hot sauce. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

In a separate bowl, mix together the flour, paprika, garlic powder, cayenne pepper, salt, and black pepper.

Bread the Chicken
Remove the chicken from the marinade and let any excess liquid drip off. Dredge the chicken thighs in the flour mixture, ensuring they are completely coated.

Fry the Chicken
Carefully place the breaded chicken in the hot oil. Fry for 6-8 minutes on each side or until the chicken is golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

Drain and Serve
Once cooked, remove the chicken from the oil and drain on paper towels. Assemble the sandwich by placing the hot chicken on the soft bread rolls, adding house-made pickles on top.
