    Sauté the Vegetables

    In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions and mushrooms, and sauté until the onions are translucent and the mushrooms are tender, about 5-7 minutes. Season with salt and black pepper to taste.

    Add Roast Beef

    Add the shaved roast beef to the skillet and cook just until heated through, about 2-3 minutes. Remove from heat.

    Prepare the Sandwich

    Spread horseradish sauce on two slices of rye bread. Layer with the beef and vegetable mixture, then top with Swiss cheese. Cover with the remaining slices of rye bread.

    Grill the Sandwich

    In the same skillet, melt the remaining tablespoon of butter over medium heat. Place the sandwiches in the skillet and grill until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

    Remove the sandwiches from the skillet, slice in half, and serve hot.
