Brewing Instructions

1. Mashing the Grains

In a large brew kettle, heat 3 gallons of water to 165°F (74°C). Add the crushed pale malt and crystal malt, stirring to ensure all grains are wet. Maintain the temperature at around 150°F (65°C) for 60 minutes.

2. Sparging

After mashing, heat another 3 gallons of water to 170°F (77°C). Sparge the grains by rinsing them with this hot water to extract sugars. Collect the wort in the kettle.

3. Boiling the Wort

Bring the collected wort to a boil. Once boiling, add the bittering hops and boil for 60 minutes. Add the flavor hops in the last 15 minutes of the boil.

4. Cooling the Wort

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

5. Fermentation

Transfer the cooled wort to a sanitized fermenter. Pitch the yeast and seal the fermenter with an airlock. Allow fermentation to occur at around 68°F to 72°F (20°C to 22°C) for 1-2 weeks.

6. Bottling

After fermentation is complete, dissolve the priming sugar in a small amount of boiling water. Add this to the bottling bucket and transfer the beer from the fermenter to the bottling bucket. Bottle the beer and cap the bottles.

7. Conditioning

Let the bottled beer condition at room temperature for about 2 weeks before refrigerating and serving.
