Cooking Instructions

  1. 1

    Prepare the Vegetables

Slice the yellow onions and leeks thinly.

  2. 2

    Sauté Onions and Leeks

In a large pot, melt the butter over medium heat. Add the sliced onions and leeks, and sauté until they are soft and caramelized, about 15-20 minutes.

  3. 3

    Add Broth and Seasoning

Pour in the broth and add thyme, salt, and pepper. Bring the mixture to a gentle boil, then reduce heat and let it simmer for 30 minutes.

  4. 4

    Prepare Croutons

While the soup simmers, preheat the oven to 375°F (190°C). Cut bread into cubes, toss with olive oil, salt, and pepper, and bake until golden brown, about 10-15 minutes.

  5. 5

    Assemble and Serve

Ladle the soup into oven-safe bowls, top each with a generous amount of Swiss cheese, and place under the broiler until the cheese is melted and bubbly. Serve hot with croutons on the side.
