Slice the yellow onions and leeks thinly.

Pour in the broth and add thyme, salt, and pepper. Bring the mixture to a gentle boil, then reduce heat and let it simmer for 30 minutes.

While the soup simmers, preheat the oven to 375°F (190°C). Cut bread into cubes, toss with olive oil, salt, and pepper, and bake until golden brown, about 10-15 minutes.
