    Prepare the Potatoes

    Wash and slice the potatoes into thin rounds. Pat them dry with a paper towel.

    Fry the Chips

    Heat the vegetable oil in a deep fryer or a large pot to 350°F (175°C). Carefully add the potato slices in batches and fry until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil. Season with salt and black pepper.

    Cook the Bacon

    In a skillet, cook the bacon over medium heat until crispy. Remove from skillet and drain on paper towels. Once cooled, crumble the bacon.

    Assemble the Nachos

    On a large baking sheet, layer the fried potato chips evenly. Sprinkle the shredded cheddar cheese over the top, followed by the crumbled bacon.

    Melt the Cheese

    Preheat the oven to 350°F (175°C). Place the baking sheet in the oven and bake for about 5-7 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove from the oven and sprinkle with chopped green onions. Serve hot and enjoy your Irish Nachos!
