    Prepare the Potatoes

    Wash and peel the Russet potatoes. Slice them into thick strips, about 1/4 inch wide.

    Soak the Potatoes

    Place the potato strips in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

    Heat the Oil

    In a large, heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes (First Fry)

    Remove the potatoes from the water and pat them dry with a paper towel. Fry the potatoes in batches for about 4-5 minutes, or until they are soft but not browned. Remove and drain on paper towels.

    Fry the Potatoes (Second Fry)

    Increase the heat of the oil to 375°F (190°C). Fry the potatoes again in batches for another 3-4 minutes, or until they are golden brown and crispy. Remove and drain on paper towels.
