Prepare the Potatoes
Wash and peel the Russet potatoes. Slice them into thick strips, about 1/4 inch wide.

Soak the Potatoes
Place the potato strips in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

Heat the Oil
In a large, heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes (Second Fry)
Increase the heat of the oil to 375°F (190°C). Fry the potatoes again in batches for another 3-4 minutes, or until they are golden brown and crispy. Remove and drain on paper towels.

While still hot, sprinkle the fries with salt and black pepper. Drizzle with vinegar if desired. Garnish with fresh parsley if using. Serve immediately.
