    In a medium saucepan, bring the vegetable broth to a boil. Add the long grain wild rice, reduce heat to low, cover, and simmer for about 45 minutes or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.

    Rub the salmon fillets with olive oil, Cajun seasoning, salt, and black pepper. Ensure the fillets are evenly coated.

    Grill the Salmon

    Preheat the grill to medium-high heat. Place the salmon fillets on the grill and cook for about 4-6 minutes on each side, or until the fish is opaque and flakes easily with a fork.

    In a skillet over medium heat, add a splash of olive oil. Sauté the mixed vegetables for about 5-7 minutes, or until they are tender-crisp. Season with salt and pepper to taste.
