    Prepare the Salmon

    Season the salmon fillets with salt and pepper. Heat a skillet over medium-high heat and add a drizzle of olive oil. Sear the salmon on each side for about 4-5 minutes or until cooked to your liking. Remove from heat and let it rest.

    Roast the Tomatoes

    Preheat your oven to 400°F (200°C). Place the cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 15-20 minutes until they are soft and slightly caramelized.

    Assemble the Salad

    In a large bowl, combine the mixed greens, marinated artichoke hearts, roasted tomatoes, cucumber slices, Kalamata olives, and crumbled feta cheese. Toss gently to combine.

    Place a portion of the salad on a plate, top with a seared salmon fillet, and drizzle with your favorite lemon vinaigrette before serving.
