Prepare the Haddock
Preheat your broiler or heat oil in a frying pan. Season the haddock fillets with Cajun seasoning, salt, and black pepper.

Cooking Methods
For broiled, place fillets on a baking sheet and broil for about 6-8 minutes or until cooked through. For fried, heat olive oil in a pan and fry fillets for about 3-4 minutes on each side until golden brown.

Make the Tartar Sauce
In a small bowl, mix together mayonnaise, dill pickles, lemon juice, capers, and salt. Stir well to combine and refrigerate until ready to serve.

Assemble the Sandwich
Slice the brioche rolls in half. Place a lettuce leaf on the bottom half, followed by a cooked haddock fillet, and a slice of tomato. Top with tartar sauce before placing the top half of the roll on.
