Fish & Chips Recipe

Prepare the Coleslaw
In a large bowl, combine shredded cabbage and grated carrot. In a separate bowl, mix mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Pour the dressing over the cabbage and carrots, toss well, and set aside to chill.

Prepare the Chips
Peel and cut the potatoes into thick strips (chips). Rinse under cold water to remove excess starch. Pat dry with a kitchen towel.

Fry the Chips
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato chips in batches until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt.

Prepare the Batter
In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in ice-cold water until smooth.

Fry the Haddock
Dip each haddock fillet into the batter, allowing excess to drip off. Carefully place in the hot oil and fry until golden brown and cooked through, about 5-6 minutes. Remove and drain on paper towels.
