Prepare the Salmon
Preheat your broiler. In a small bowl, mix the Dijon mustard, olive oil, salt, and black pepper. Place the salmon fillets on a broiler-safe pan and spread the Dijon mixture evenly over the top of each fillet.

Broil the Salmon
Place the salmon under the broiler and cook for about 6-8 minutes, or until the salmon is cooked through and the top is golden brown and slightly crispy.

Prepare the Salad
While the salmon is broiling, in a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, and red onion. Toss gently to mix.

Assemble the Dish
Once the salmon is done, remove it from the oven and let it rest for a minute. Serve the salmon on top of the prepared salad, sprinkle with grated parmesan cheese, and drizzle with your choice of dressing.
