Method
Fried Quail

Marinate the Quail
In a bowl, soak the cleaned quail in buttermilk for at least 2 hours or overnight in the refrigerator.

Prepare the Coating
In a separate bowl, mix together the flour, cornmeal, salt, black pepper, and cayenne pepper.

Fry the Quail
Heat oil in a deep fryer or large pot to 350°F (175°C). Remove quail from buttermilk, dredge in the flour mixture, and fry until golden brown, about 4-5 minutes per side. Drain on paper towels.

Prepare the Jalapeños
Slice the tops off jalapeños and remove seeds. Set aside.

Make the Filling
In a bowl, combine cream cheese, cheddar cheese, crumbled bacon, and smoked paprika. Stuff each jalapeño with the cheese mixture.

Batter and Fry
Dip each stuffed jalapeño in the batter and fry in hot oil until golden brown, about 3-4 minutes. Drain on paper towels.

Prepare the Salad
In a large bowl, combine chopped little gem lettuce, cherry tomatoes, and diced cucumber.

Dress the Salad
Drizzle with olive oil and lemon juice, and season with salt and pepper to taste. Toss to combine.
Spicy Ranch

Mix the Spicy Ranch
In a small bowl, combine ranch dressing, hot sauce, garlic powder, and onion powder. Mix well.

Toast
Toast in a pan or oven until golden brown, about 2-3 minutes per side.

Mix the Caviar
In a bowl, combine cooked black-eyed peas, diced red bell pepper, sliced green onion, and chopped cilantro.

Drizzle with olive oil and red wine vinegar, and season with salt and pepper to taste. Toss to combine.
