Fried Beet Falafel

    Prepare the Falafel Mixture

    In a food processor, combine cooked beets, chickpeas, garlic, cilantro, flour, cumin, salt, and black pepper. Pulse until a coarse mixture forms.

    Using your hands, form the mixture into small balls or patties.

    In a large skillet, heat olive oil over medium heat. Fry the falafel until golden brown on all sides, about 3-5 minutes per side. Drain on paper towels.

Mint-Cilantro Emulsion

    In a blender, combine mint, cilantro, lemon juice, olive oil, and salt. Blend until smooth and creamy.

Tomato Harissa

    In a small saucepan, combine tomato paste, harissa paste, minced garlic, olive oil, and salt. Heat over low heat until warmed through, stirring occasionally.

French Couscous

    In a saucepan, bring water to a boil. Add couscous, olive oil, and salt. Cover and remove from heat. Let sit for 5 minutes, then fluff with a fork.
