Chocolate Lava Cake

    Prepare the Batter

    Preheat your oven to 200°C (400°F). Melt the dark chocolate and butter together in a heatproof bowl over simmering water (double boiler). Stir until smooth. Remove from heat and let cool slightly.

    Combine Ingredients

    In another bowl, whisk together the sugar, eggs, and egg yolks until pale. Gradually mix in the melted chocolate mixture, then fold in the flour and vanilla extract until just combined.

    Bake

    Grease four ramekins and pour the batter into them, filling about 3/4 full. Bake for 12-14 minutes until the edges are firm but the center is soft. Let cool for 1 minute, then invert onto plates.

Cherry Red Wine Reduction

    Combine Ingredients

    In a saucepan over medium heat, combine cherry wine, fresh cherries, and sugar. Bring to a simmer.

    Reduce

    Let simmer for about 15-20 minutes, stirring occasionally, until the mixture thickens. Add lemon juice and stir to incorporate. Remove from heat and let cool slightly.

Cherry Ice Cream

    Prepare the Ice Cream Base

    In a bowl, whisk together heavy cream, whole milk, sugar, and vanilla extract until the sugar dissolves. Fold in the chopped cherries.

    Chill and Churn

    Refrigerate the mixture for at least 2 hours, then churn in an ice cream maker according to the manufacturer's instructions. Freeze until firm.
