Prepare the cookie crumble
Crush the Galletas Maria cookies into fine crumbs using a food processor or by placing them in a zip-top bag and rolling over them with a rolling pin.

Whip the mascarpone
In a mixing bowl, combine the mascarpone cheese, Bailey's Irish Cream, powdered sugar, and vanilla extract. Whip until smooth and creamy.

Make the whipped cream
In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined.

Assemble the dessert
In serving glasses or bowls, layer the lemon curd, followed by a layer of the poppy seeds, then a layer of the Bailey's whipped mascarpone. Top with a generous sprinkle of the Galletas Maria cookie crumble.

Melt the dark chocolate in a microwave or double boiler. Drizzle the melted chocolate over the assembled desserts.
