Preparation

    Roast the Lamb Ribs

    Preheat the oven to 180°C (350°F). Season the Denver lamb ribs with salt, pepper, and cumin. Rub with olive oil. Place on a baking sheet and roast for 45-50 minutes or until tender.

    Prepare the Mint Chutney

    In a blender, combine fresh mint leaves, a pinch of salt, and a little water. Blend until smooth. Adjust seasoning and set aside.

    Pickle the Fennel and Cucumber

    In a bowl, combine sliced fennel and cucumber with salt and a splash of vinegar. Let it sit for at least 30 minutes.

    Prepare the Beet Falafel Patty

    In a bowl, mix mashed beetroot with cooked chickpeas, salt, pepper, and cumin. Form into patties. Heat a pan with olive oil and cook patties until golden brown, about 3-4 minutes on each side.

    Assemble the Burger

    On each pita, layer the beet falafel patty, roasted lamb ribs, mint chutney, pickled fennel and cucumber, and sliced red onion. Serve with a side of fried chickpeas.
