    Make the Spinach Dip

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add fresh spinach and cook until wilted. Remove from heat and let cool slightly. In a bowl, combine the cooked spinach, cream cheese, and lime juice. Mix well until smooth and creamy. Set aside.

    Prepare the Shrimp

    In the same skillet, heat the remaining tablespoon of olive oil over medium-high heat. Season the shrimp with salt, black pepper, and cumin. Add the shrimp to the skillet and cook for about 2-3 minutes on each side or until they are pink and opaque. Remove from heat and chop the shrimp into smaller pieces.

    Assemble the Quesadillas

    On one half of each flour tortilla, spread a generous amount of spinach dip. Top with chopped shrimp and a portion of shredded asiago cheese. Fold the tortilla over to create a half-moon shape.

    Cook the Quesadillas

    In the same skillet, or a clean skillet, place the folded quesadilla and cook over medium heat for about 3-4 minutes on each side or until the tortilla is golden brown and the cheese is melted. Repeat with remaining tortillas.

    Cut the quesadillas into wedges and serve warm with additional spinach dip or salsa on the side.
