Cooking Instructions
Cook the Lobster
In a pot of boiling salted water, cook the lobster tails for about 8-10 minutes until they are bright red and cooked through. Remove from water, cool slightly, and then chop into bite-sized pieces.
Prepare the Macaroni
In a large pot, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
Make the Cheese Sauce
In the same pot, melt the butter over medium heat. Stir in the flour and cook for 2 minutes. Gradually whisk in the milk and bring to a simmer. Cook until thickened (about 5-7 minutes). Stir in the cheddar and Gruyère cheese until melted and smooth. Season with salt, pepper, and paprika.
Combine Ingredients
Add the cooked macaroni and lobster pieces to the cheese sauce, stirring until well coated.
Prepare for Baking
Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish. Top with breadcrumbs and drizzle with olive oil.
Bake
Bake in the preheated oven for 25-30 minutes, until the top is golden and crispy.
