Prepare the Spinach Lobster Filling

In a skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant. Then add the spinach and cook until wilted. Stir in lobster meat, heavy cream, salt, and pepper. Cook for an additional 2-3 minutes until the mixture is heated through. Remove from heat and set aside.

Prepare the Salmon

Preheat the oven to 375°F (190°C). Cut a pocket into each salmon fillet and stuff with the lobster-spinach mixture. Secure with toothpicks if necessary.

Cook the Salmon

In a large skillet, heat 2 tablespoons of butter over medium-high heat. Add the stuffed salmon fillets and sear for about 4-5 minutes on each side until golden brown. Transfer to a baking dish and place in the oven for 10-12 minutes or until cooked through.

Prepare Shrimp Scampi

In the same skillet, melt the remaining 2 tablespoons of butter. Add shrimp and cook until pink and opaque, about 3-4 minutes. Stir in lemon juice and parsley.

Serve

Plate the stuffed salmon and top with shrimp scampi. Garnish with additional parsley if desired.
