Instructions for Making Salmon Nigiri

    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit for 10 minutes.

    Season the Rice

    In a small bowl, combine the rice vinegar, sugar, and salt. Heat gently until the sugar dissolves. Mix this seasoning into the cooked rice while it's still warm. Use a wooden spatula to fold the rice gently without mashing it. Allow the rice to cool to room temperature.

    Slice the Salmon

    Using a sharp knife, slice the fresh salmon fillet against the grain into thin slices, about 1/4 inch thick.

    Form the Nigiri

    Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and shape it into an oval ball. Press gently to form a compact shape.

    Assemble the Nigiri

    Place a slice of salmon on top of the rice ball. Optionally, you can add a small dab of wasabi between the rice and salmon.

    Serve

    Serve the salmon nigiri with soy sauce, wasabi, and pickled ginger on the side.
