Prepare the Fish
Season the orange roughy fillets with salt and black pepper on both sides.

Heat the Oil
In a large skillet, heat the olive oil over medium-high heat.

Sear the Fish
Add the seasoned fillets to the skillet and cook for about 3-4 minutes on each side, or until the fish is golden brown and cooked through.

Add Toppings
Once the fish is cooked, top each fillet with roasted red peppers and provolone cheese. Cover the skillet for a minute or two to allow the cheese to melt.

Make the Relish
In a small bowl, combine the diced tomatoes and chopped basil.

Plate the fish and top with the tomato and basil relish before serving.
