Prepare the Crust

Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

Bake the Crust

Bake the crust in the preheated oven for about 10 minutes, or until lightly golden. Remove from the oven and let it cool.

Make the Filling

In a large bowl, beat the softened cream cheese until smooth. Gradually add sugar and mix well. Add sour cream, vanilla extract, and flour, mixing until combined. Add eggs one at a time, mixing on low speed until just incorporated.

Combine and Bake

Pour the cream cheese filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the oven for 50-60 minutes, or until the center is set but still slightly jiggly.

Cool and Chill

Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. Then, remove from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight.
