Prepare the Seafood
Start by preparing the lobster tails. Cut them in half lengthwise and remove any shell fragments. Clean the shrimp by peeling and deveining them. Rinse the catfish fillets under cold water and pat dry.

Marinate in Buttermilk
In a large bowl, pour the buttermilk over the lobster, shrimp, and catfish. Let them marinate for at least 30 minutes to 1 hour in the refrigerator.

Prepare the Breading
In a large mixing bowl, combine the flour, cornmeal, cajun seasoning, salt, and black pepper. Mix well to ensure the seasonings are evenly distributed.

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches around 350°F (175°C).

Bread the Seafood
Remove the seafood from the buttermilk and let the excess drip off. Dredge each piece in the flour mixture, ensuring an even coating.

Carefully place the breaded seafood into the hot oil. Fry the lobster tails for about 4-5 minutes, shrimp for about 2-3 minutes, and catfish for about 4-5 minutes, or until golden brown and cooked through.
