Wash and trim the ends of the fresh green beans. Pat them dry with a paper towel to remove excess moisture.

In a mixing bowl, toss the green beans with cornstarch until they are evenly coated.

In a deep frying pan or wok, heat the vegetable oil over medium-high heat until hot (about 180°C or 350°F).

Fry the Green Beans
Carefully add the coated green beans to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 4-5 minutes or until they are golden brown and crispy.

In a separate pan, combine the minced garlic, ginger, Szechuan peppercorns, soy sauce, rice vinegar, chili paste, and salt. Cook over medium heat for 2-3 minutes until fragrant.

Once the green beans are fried, drain them on paper towels. Immediately toss the hot green beans in the prepared sauce, ensuring they are well coated.
