    Prepare the Lotus Roots

    Peel the lotus root and slice it into thin rounds, about 1/4 inch thick. Rinse the slices in water to remove excess starch.

    Make the Batter

    In a bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Gradually add water to the mixture, stirring until you achieve a smooth batter.

    Heat the Oil

    In a deep pan or skillet, heat vegetable oil over medium-high heat. Ensure there is enough oil to submerge the lotus root slices.

    Coat and Fry

    Dip each lotus root slice into the batter, allowing excess batter to drip off. Carefully place the slices in the hot oil and fry until golden brown, about 3-4 minutes. Flip halfway through for even cooking.

    Drain and Garnish

    Once fried, remove the lotus root slices and place them on a plate lined with paper towels to drain excess oil. Sprinkle with sesame seeds and chopped green onions before serving.
