Prepare the Onion Straws
Heat vegetable oil in a deep skillet over medium heat. In a bowl, mix the flour with a pinch of salt and pepper. Dredge the thinly sliced onions in the flour mixture, shaking off excess. Fry the onions in batches until golden brown and crispy. Remove and drain on paper towels. Set aside.

Cook the Filet Mignon
Season the filet mignon steaks with salt and black pepper on both sides. In a large skillet, heat olive oil over medium-high heat. Once hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for a few minutes.

Plate the Dish
On a serving plate, create a bed of crispy onion straws. Place the seared filet mignon on top. Drizzle with zip sauce and serve immediately.
