Prepare the Crab Stuffing
In a mixing bowl, combine crab meat, cream cheese, breadcrumbs, green onions, lemon juice, garlic powder, Old Bay seasoning, salt, and black pepper. Mix until well combined. Set aside.

Prepare the Steak
Take the New York strip steaks and make a pocket in the side of each steak by slicing about halfway through. Be careful not to cut all the way through. Season the outside of the steaks with salt and pepper.

Stuff the Steaks
Stuff each pocket with the prepared crab stuffing, pressing gently to fill completely. Secure with toothpicks if necessary.

Pan-Sear the Steaks
Heat a skillet over medium-high heat and add a bit of oil. Once hot, add the stuffed steaks and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

Prepare the Zip Sauce
In a small bowl, mix together ingredients for the zip sauce (mayonnaise, hot sauce, lemon juice, and Worcestershire sauce). Adjust seasoning to taste.

Serve
Remove the steaks from the skillet and let rest for a few minutes. Serve the crab stuffed New York strip with a drizzle of zip sauce on top.
