Cake and Mousse

Method

Preparation

  1. 1

    Prepare the Cake

Preheat your oven to 180°C (350°F). Grease and flour a 9-inch round cake pan.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine dark chocolate and unsalted butter. Melt over a double boiler or in the microwave, stirring until smooth. Let it cool slightly.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together granulated sugar and eggs until pale and fluffy.

  4. 4

    Combine Mixtures

Fold the melted chocolate mixture into the egg and sugar mixture. Sift in the flour and a pinch of salt, and gently fold until just combined.

  5. 5

    Bake the Cake

Pour the batter into the prepared cake pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let it cool completely.

  6. 6

    Make the Mousse

In a bowl, whip heavy cream with powdered sugar and vanilla extract until soft peaks form.

  7. 7

    Combine Mousse with Cake

Once the cake is cooled, spread the whipped cream mixture over the top of the cake, smoothing it out evenly.

  8. 8

    Chill and Serve

Refrigerate the cake for at least 2 hours before serving to allow the mousse to set. Slice and enjoy!
