Prepare the Catfish
Cut the catfish fillets into bite-sized nuggets. Rinse them under cold water and pat dry with paper towels.

Prepare the Breading
In a shallow bowl, combine flour, cornmeal, salt, black pepper, and cayenne pepper.

Dredge the Nuggets
In another bowl, whisk together eggs and buttermilk. Dip each catfish nugget into the egg mixture, then coat it in the flour-cornmeal mixture, pressing gently to adhere.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Nuggets
Carefully add the breaded catfish nuggets to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes per side or until golden brown and cooked through.

Drain and Serve
Remove the nuggets from the oil and place them on a paper towel-lined plate to drain. Serve hot with cajun aioli sauce.
