Prepare the Catfish
In a large bowl, combine buttermilk and eggs, whisking until well blended. Submerge the catfish fillets in the buttermilk mixture and marinate for at least 30 minutes.

Prepare the Breading
In a separate shallow dish, mix together the flour, cornmeal, Cajun seasoning, salt, and black pepper.

Coat the Catfish
Remove catfish from the buttermilk mixture, allowing excess to drip off. Dredge each fillet in the flour-cornmeal mixture, ensuring they are evenly coated.

Fry the Catfish
In a large, deep skillet or frying pan, heat vegetable oil over medium-high heat until hot. Carefully add the coated catfish fillets to the oil, frying in batches if necessary. Cook for about 4-5 minutes on each side or until golden brown and cooked through.

Drain and Serve
Remove the fried catfish from the oil and place on paper towels to drain excess oil. Serve hot with fries, hush puppies, coleslaw, and tartar sauce.
