    Prepare the Salmon

    Season the salmon fillets with salt and black pepper on both sides.

    Sear the Salmon

    In a large skillet, heat olive oil over medium-high heat. Add the salmon fillets skin-side down and sear for about 4-5 minutes until golden brown. Flip and cook for another 3-4 minutes until cooked through. Remove from the skillet and set aside.

    Prepare the Sauce

    In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Add the wild mushrooms and cook for about 5 minutes until they are soft.

    Add Spinach and Cream

    Add the fresh spinach to the skillet and cook until wilted. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and well combined.

    Serve

    Return the salmon fillets to the skillet, spoon the sauce over them, and let them warm through for a minute. Serve immediately.
