Preparing the Cheese Curds

Make the Batter
In a mixing bowl, combine flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and free of lumps.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Batter the Cheese Curds
Dip the white cheddar cheese curds into the batter, ensuring they are fully coated.

Fry the Curds
Carefully place the battered cheese curds into the hot oil in batches. Fry for about 2-3 minutes, or until they are golden brown and crispy. Remove and drain on paper towels.
Sriracha Ranch Dipping Sauce

Mix the Sauce
In a small bowl, combine the ranch dressing and sriracha sauce. Stir until well blended. Adjust sriracha to taste for more spiciness.
