Prepare Cucumber Pickles

Slice the cucumber into thin rounds and marinate in red wine vinegar for at least 30 minutes.

Make Tartar Sauce

In a bowl, mix mayonnaise, lemon juice, salt, and pepper. Set aside.

Prepare Coleslaw

Finely shred the cabbage and carrot. In a large bowl, combine cabbage, carrot, sugar, salt, and pepper. Toss well and refrigerate until ready to serve.

Fry the Cod

In a bowl, whisk together flour, cornmeal, salt, and pepper. In another bowl, beat the egg and milk together. Dip each cod fillet in the egg mixture, then coat in the flour mixture. Heat oil in a deep pan and fry the cod until golden brown and cooked through, about 4-5 minutes per side.

Assemble the Sandwiches

Toast the brioche buns. Place a piece of fried cod on each bun, top with cucumber slices and a generous dollop of tartar sauce. Serve with a side of coleslaw.
