Prepare the Black Bean Patty

In a mixing bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture. Add rolled oats, chopped onion, minced garlic, cumin, smoked paprika, salt, and black pepper. Mix well until combined.

Form Patties

Divide the mixture into two equal portions and form into patties. Refrigerate for about 30 minutes to help them firm up.

Cook the Patties

Heat a non-stick skillet over medium heat. Cook each patty for about 5-6 minutes per side, or until golden brown and heated through.

Make the Aioli

In a blender, combine roasted red peppers, vegan mayonnaise, lemon juice, minced garlic, and salt. Blend until smooth and creamy.

Assemble the Burger

Toast the vegan pretzel buns. Spread a generous amount of roasted red pepper aioli on the bottom half of the bun. Add the black bean patty, topped with sliced avocado, lettuce leaves, and red onion. Finish with the top half of the bun.
