Prepare the Jalapeños

Slice the jalapeños in half lengthwise and remove the seeds and membranes. This will help reduce the heat.

Make the Filling

In a mixing bowl, combine the cream cheese, cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.

Stuff the Jalapeños

Spoon the cheese mixture into each jalapeño half, filling them generously.

Prepare the Breading Station

Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.

Bread the Jalapeños

Dip each stuffed jalapeño in flour, then in the beaten eggs, and finally coat with breadcrumbs.

Fry the Jalapeños

In a large pot or deep fryer, heat oil to 350°F (175°C). Fry the jalapeño poppers in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Make the Cilantro Lime Sour Cream

In a small bowl, mix the sour cream, chopped cilantro, and lime juice until well combined.
