    Prepare the Potatoes

    Wash and slice the Russet potatoes into thin rounds using a mandoline or sharp knife. Rinse the slices in cold water to remove excess starch, then pat them dry with paper towels.

    Fry the Chips

    In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully add potato slices in small batches, frying until they are golden brown and crispy, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels. Season with salt and black pepper while still hot.

    Make the Cilantro Lime Sour Cream

    In a medium bowl, combine the sour cream, chopped cilantro, lime juice, and garlic powder. Mix well until smooth and creamy.

    Serve the kettle-fried chips hot with a side of cilantro lime sour cream for dipping.
