    Prepare the Potatoes

    Wash the russet potatoes thoroughly. Peel them if you prefer, then cut them into even, thick strips to form the fries.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

    Prepare the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). You can use a thermometer to check the temperature.

    Fry the Potatoes

    Remove the potatoes from the water and pat them dry with a kitchen towel. Fry them in batches, making sure not to overcrowd the pot. Cook for about 5-7 minutes or until golden brown and crispy.

    Season the Fries

    Remove the fries from the oil and place them on a paper towel to drain excess oil. While they're still hot, sprinkle with salt and black pepper to taste.
