Burger Preparation

    Prepare the Taro-Ulu Patty

    In a mixing bowl, mash the cooked taro and ulu together until smooth. Stir in finely chopped jalapeno and breadcrumbs. Form the mixture into two patties.

    Cook the Patty

    Heat a non-stick skillet over medium heat. Add a little oil and cook the patties for about 4-5 minutes on each side until golden brown and heated through.

    Make the Taro-Naise

    In a small bowl, combine mashed taro with mayonnaise (or yogurt) and a pinch of salt. Mix until smooth to create the taro-naise.

    Assemble the Burger

    Toast the whole wheat buns. Spread a generous amount of taro-naise on both halves of the bun. Place the cooked patty on the bottom half, top with shredded cheddar, sliced tomato, shredded carrot, and sprouts. Top with the other half of the bun.

    Serve

    Cut the burger in half if desired, and serve immediately with additional sides of your choice.
