Bagel Preparation

    Prepare the Dough

    In a bowl, dissolve the yeast and honey in warm water. Let it sit for about 5 minutes until frothy. In a large mixing bowl, combine the sprouted whole wheat flour and salt. Gradually add the yeast mixture to the flour while stirring. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place it in a greased bowl, cover with a clean cloth, and let rise in a warm place for about 1 hour, or until doubled in size.

    Shape the Bagels

    Preheat the oven to 425°F (220°C). Punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball, then poke a hole in the center to form a bagel shape. Let them rest for 10 minutes.

    Boil the Bagels

    In a large pot, bring water to a boil and stir in the baking soda. Boil each bagel for about 1 minute on each side. Remove them with a slotted spoon and place them on a baking sheet lined with parchment paper.

    Bake the bagels in the preheated oven for 20-25 minutes, or until golden brown. Let them cool on a wire rack.
