Fritters Preparation

    Prepare the Fritter Mixture

    In a large bowl, combine the grated cassava, 'ulu, and taro. Add the finely chopped jalapeno, flour, baking powder, salt, and black pepper. Mix until well combined.

    Form the Fritters

    Using your hands, take a handful of the mixture and shape it into small patties (about 2-3 inches in diameter). Place them on a plate.

    Heat the Oil

    In a large skillet, heat the coconut oil over medium heat until hot.

    Fry the Fritters

    Carefully add the fritters to the hot oil, making sure not to crowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

    Drain and Serve

    Once fried, remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with housemade fresh coconut 'olena hot sauce.
