Preparing Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a saucepan, combine the rinsed sushi rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is tender and water is absorbed.

Season the Rice
Once cooked, transfer the rice to a large bowl. Mix rice vinegar, sugar, and salt in a separate bowl until dissolved, then gently fold this mixture into the warm rice. Allow the rice to cool to room temperature.

Prepare Yellowtail
Slice the yellowtail fish into thin strips, about 1/4 inch wide.

Prepare Avocado
Cut the avocado in half, remove the pit, and scoop out the flesh. Slice into thin strips.

Prepare Cream Cheese
Soften the cream cheese by letting it sit at room temperature for about 15 minutes, then stir until smooth.
Rolling the Sushi

Lay Out Nori
Place a sheet of nori on a bamboo sushi mat, shiny side down.

Spread the Rice
Wet your hands to prevent sticking and take a handful of sushi rice, spreading it evenly over the nori, leaving about 1 inch at the top edge.

In the center of the rice, layer the yellowtail, avocado, cucumber, and dollops of cream cheese.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight roll. Seal the edge of the nori with a little water.

Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to keep the slices clean.
