Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over high heat, then reduce to low, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed.

    Season the Rice

    In a small bowl, combine rice vinegar, sugar, and salt. Heat in the microwave for 30 seconds to dissolve the sugar and salt. Once the rice is cooked, transfer it to a large bowl, and gently fold in the vinegar mixture. Let it cool to room temperature.

Prepare Spicy Tuna Filling

    Chop the Tuna

    Cut the sushi-grade tuna into small cubes, about 1/2 inch in size.

    Mix the Filling

    In a medium bowl, combine the chopped tuna, mayonnaise, Sriracha sauce, chopped green onions, and sesame oil. Mix until well combined and set aside.

Assemble the Sushi Rolls

    Prepare the Nori

    Place a bamboo sushi mat on a flat surface. Lay a sheet of nori shiny side down on the mat.

    Spread the Rice

    Wet your hands with water to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    Add Fillings

    In the center of the rice, place a line of the spicy tuna mixture, followed by a few slices of cucumber and avocado.

    Roll the Sushi

    Using the bamboo mat, lift the edge closest to you and roll it over the filling tightly. Continue rolling until you reach the border of nori, wet the edge with water to seal.

    Slice the Rolls

    Using a sharp knife, slice the roll into 6-8 pieces, wiping the knife clean between cuts.

Serve

    Plate the Sushi

    Arrange the sushi rolls on a plate. Serve with soy sauce, pickled ginger, and wasabi on the side.
