Prepare Sushi Rice

Rinse the Rice
Place the sushi rice in a fine-mesh sieve and rinse it under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium pot, combine the rinsed rice and 2.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit, covered, for an additional 10 minutes.

Season the Rice
In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice using a spatula, being careful not to mash the grains. Let the rice cool to room temperature.

Prepare the Eel
If using unagi, slice the grilled eel into bite-sized pieces. If using unagi sauce, mix soy sauce, mirin, and sugar in a small saucepan and heat gently until the sugar dissolves.

Cook the Vegetables
In a pan, lightly sauté the assorted vegetables in a bit of oil until just tender, about 3-5 minutes. Set aside.

Assemble the Dish
In a bowl, place a serving of sushi rice as the base. Top with the sliced eel and sautéed vegetables. Drizzle with the eel sauce, and garnish with chopped green onions, shredded nori, and sesame seeds.
