Prepare Sushi Rice

Rinse the Rice
Place sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 18-20 minutes until rice is tender. Remove from heat and let it sit covered for 10 minutes.

Season the Rice
In a small bowl, combine rice vinegar, sugar, and salt. Microwave for 10-15 seconds to dissolve. Fluff the cooked rice with a fork and gently mix in the vinegar mixture. Let it cool to room temperature.

In a medium bowl, combine drained canned tuna, mayonnaise, soy sauce, chopped green onions, and Sriracha (if using). Mix well until the ingredients are blended.

Assemble the Rolls
Place a bamboo sushi mat on a flat surface and lay one sheet of nori on it, shiny side down. Wet your hands to prevent sticking and spread a thin layer of sushi rice (about 3/4 cup) evenly over the nori, leaving a 1-inch border at the top.

Add the Filling
Spoon a line of the tuna mixture along the center of the rice. You can add more or less depending on your preference.

Roll the Sushi
Using the bamboo mat, carefully lift the edge of the mat closest to you and begin to roll the sushi away from you, applying gentle pressure to keep it tight. Continue rolling until you reach the border of the nori. Moisten the edge with a little water to seal the roll.

Cut the Rolls
Using a sharp knife, slice the roll into 6-8 pieces. Clean the knife with a damp cloth between cuts for clean slices.

Garnish and Serve
Sprinkle sesame seeds on top of the rolls if desired. Serve immediately with soy sauce, pickled ginger, and wasabi.
