Combine the rinsed sushi rice and water in a rice cooker and cook according to the manufacturer's instructions. Alternatively, bring to a boil in a pot, then reduce to low heat, cover, and simmer for 20 minutes.

Once cooked, transfer the rice to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the rice and gently fold to combine while fanning the rice to cool it down.
