Prepare Sushi Rice

Rinse Rice
Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Cook Rice
Combine the rinsed sushi rice and water in a rice cooker or pot. Cook according to the rice cooker's instructions, or bring to a boil, then reduce heat and simmer for about 20 minutes until the water is absorbed.

Rest Rice
Once cooked, let the rice sit covered for 10 minutes, then transfer to a large bowl.

Season Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the rice and gently fold it in using a wooden spatula. Allow the rice to cool to room temperature.
Prepare Sushi Fillings

Slice Fish
Slice the fresh salmon and tuna fillets into thin strips, about 1/2 inch wide.

Prepare Shrimp
Boil or steam the shrimp until they turn pink and are cooked through, about 2-3 minutes. Let cool and set aside.

Assemble Sushi

Spread Rice
Place a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking and take a handful of sushi rice. Spread it evenly over the nori, leaving about 1 inch at the top uncovered.

Roll Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to keep it compact. Seal the edge with a little water.

Continue Rolling
Repeat the process with the remaining nori sheets and fillings.

Slice Rolls
Using a sharp knife, slice the rolled sushi into bite-sized pieces, about 1 inch thick.
Serve Sushi

Serve Platter
Arrange the sushi rolls on a platter. Serve with soy sauce, wasabi, and pickled ginger on the side.
