Prepare Sushi Rice

Rinse and Cook Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice with 2.5 cups of water in a rice cooker and cook according to the rice cooker instructions or bring to a boil in a pot, then reduce heat, cover, and simmer for 20 minutes until tender.

Season Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture while fanning the rice to cool it down.

Fry Shrimp
Dip the shrimp into the batter and carefully place them in the hot oil. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Assemble Shrimp Tempura Roll
Place a nori sheet on a bamboo sushi mat. Wet your hands and spread a thin layer of sushi rice over the nori, leaving a small border at the top. Place shrimp, cucumber, and avocado in the center. Roll tightly using the mat, then slice into 6 pieces.

Thinly slice the assorted sushi-grade fish against the grain into bite-sized pieces.

Assemble Sushi
Take a nori sheet and spread a thin layer of sushi rice on top. Place sliced fish on the rice, and sprinkle sesame seeds for garnish. Roll tightly and slice into 6 pieces.
Serve

Plate and Serve
Arrange 6 pieces of shrimp tempura roll and 6 pieces of chef's choice sushi on a plate. Serve with soy sauce, pickled ginger, and wasabi on the side.
