Preparation
- 1
Prep the Fish
Rinse the snapper fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.
- 2
Make the Marinade
In a bowl, whisk together olive oil, lemon juice, minced garlic, and chopped fresh parsley. This will be your marinade.
Marinating
- 3
Marinate the Fish
Place the seasoned snapper fillets in a shallow dish and pour the marinade over them. Ensure the fish is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Cooking
- 4
Prepare the Vegetables
While the fish is marinating, wash the asparagus and cherry tomatoes. Trim the ends of the asparagus and cut the tomatoes in half.
- 5
Cook the Asparagus
In a large skillet over medium heat, add a splash of olive oil. Once hot, add the asparagus and sauté for about 5-7 minutes until tender but still crisp.
- 6
- 7
Add the Cherry Tomatoes
During the last minute of cooking, add the halved cherry tomatoes to the skillet, allowing them to warm through.
Serving
- 8
Plate the Dish
On a serving platter, arrange the sautéed asparagus and top with the cooked snapper fillets. Scatter the cherry tomatoes around the fish.
- 9
Garnish and Serve
Garnish with lemon wedges and a sprinkle of fresh parsley. Serve immediately.
