    Prep the Fish

    Rinse the snapper fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

    Make the Marinade

    In a bowl, whisk together olive oil, lemon juice, minced garlic, and chopped fresh parsley. This will be your marinade.

    Marinate the Fish

    Place the seasoned snapper fillets in a shallow dish and pour the marinade over them. Ensure the fish is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Cooking

    While the fish is marinating, wash the asparagus and cherry tomatoes. Trim the ends of the asparagus and cut the tomatoes in half.

    In a large skillet over medium heat, add a splash of olive oil. Once hot, add the asparagus and sauté for about 5-7 minutes until tender but still crisp.
