Preparing Sushi Rice

Cook the Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. If cooking on the stove, bring to a boil, then reduce heat, cover, and simmer for about 20 minutes.

Season the Rice
Once cooked, transfer the rice to a large bowl. In a small saucepan, mix rice vinegar, sugar, and salt over low heat until dissolved. Pour this mixture over the rice and gently fold to combine. Allow the rice to cool to room temperature.
Making Tempura Batter and Frying Shrimp

Prepare the Tempura Batter
In a mixing bowl, whisk together the all-purpose flour, cornstarch, and baking powder. Gradually add ice water while whisking until you achieve a smooth batter. Do not overmix; some lumps are okay.

Fry the Shrimp
Heat vegetable oil in a deep pot over medium-high heat. Dip the shrimp into the tempura batter, allowing excess batter to drip off, and carefully place them in the hot oil. Fry in batches until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
Assembling the Sushi Roll

Prepare the Nori and Fillings
Place a bamboo sushi mat on a flat surface. Lay a sheet of nori shiny side down on the mat. Wet your hands and grab a handful of sushi rice, spreading it evenly over the nori, leaving a 1-inch border at the top.

Place slices of cream cheese, avocado, cucumber, and a few pieces of fried shrimp in a line across the rice-covered nori.

Roll the Sushi
Using the bamboo mat, roll the nori away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water. Repeat with the remaining ingredients.

Using a sharp knife, slice the sushi rolls into 6-8 pieces. Serve with soy sauce, wasabi, and pickled ginger on the side.
